    thanks for your peanut brittle advice.

    i am an out of work attorney and have been making soups to keep busy and share with friends this impoverished holiday season.

    after seeing kathie bates make brittle on a movie last week, i decided to try and screwed up by not having a candy thermometer or realizing it was 90% humidity and 65 degrees in nyc yesterday.

    needless to say, i had goo when i woke this am and wodered if repair was possible. after reading your post, i decided to try a very hot oven (500 then reduced to 400) stirring often. when it was a rapis boil, i moved it to the stove for another 5 minutes and used the water test you mention.

    i have now re-poured the brittle onto its 3rd chilling sheet. it did not noticibly burn tho the color has changed.

    i’ll let you know if it worked or if it becomes garbage.
